Today Isn’t Just Easter

It’s also the day that would have been my dad’s 64th birthday. Before Mom left on her trip, as we always do around this time of the year, we reflected on how incredible it is that it’s been almost 4 years since my dad passed. But, this post isn’t about his passing but rather about his living. He was a large man. Not large as in size – although at 6’2 and 200 pounds, he could appear intimidating. But large as in personality and demeanor. Everything Don did, he did 100%. Probably because he was born to a woman who raised him by herself in a time where that just wasn’t “normal”. My Grandmother Lawrence was a product of the Great Depression so the only thing she knew was working hard, saving what little money she could and raising her family. Southern Cooking

I’m cooking 3 freezer friendly dishes today because in the South, when someone’s family has a death or illness, that’s what we do. As far back as I can remember, that’s the way it’s always been. When my Grandmother was still alive, she was one of the women of the church that would organize the meals. The news usually went like this… someone called the preacher and then the preacher would let everyone know that there was an event in the church. Then the ladies who were in charge of organizing the meals would get busy.  Within 2 hours time, the family in need would have enough food to feed them for the week and by the end of the week, enough food for the month. Saturday Snippets 2-25

A whole week without Mackenzie makes for a long week. Looking forward to see her back home tomorrow night but boy is that Monday 6am alarm going to stink for her. Ouch. Oh well. the price you pay for a week in paradise. I’ve heard she’s done really well for her first time skiing and even skied all blues yesterday! Can’t wait to see the photos but for now, this is the best I can give you:   We’ve had it all this week as far as weather goes. Snow on Sunday and then 75° on Thursday and Friday. Of course, today was 40° and windy because we had to go and (wo)man the Girl Scout cookie booth. Luckily we only had to brave the biting wind for an hour and a half so not too bad. Love Notes for Wordless Wednesday

Okay, maybe they’re not quite love notes but still… I love finding the little random notes that my girls leave around the house. Some are meant to be found, others not so much. For instance…. here are two from Cassie that literally had me laughing out loud.   Not sure if her sisters ever selected an option, but if I have to guess – I’d say they chose “no”. And then, when we had the audacity to send Mackenzie to Girl Scout camp last summer (and they ran out of water for a day and had to bring in port-o-potties), this is the letter we got from our poor, deprived girl…   I love finding these and more importantly, keeping them Hey! It Is Winter, Right?

This has been the mildest winter in a long time. I think the coldest stretch of weather we got was back in early November. We’ve average mid to upper 50′s consistently and hitting upper 60′s hasn’t been a far shot either. And, as much as my power bill thanks Old Man Winter for forgetting we were here, I like seasonal temperatures so the fact that I haven’t worn any of my sweaters (I rely on them for extra padding.. they’re half my winter wardrobe!), haven’t broken out my ugly UGG boots and have barely worn a coat. So when I finally tuned into the weather late last week to hear that it was going to be 65° on Saturday and snowing on Sunday, I was stoked.
